Firecracker Salmon (MARINATE!)

Shopping List

  • 2 pieces salmon filet, total 2/3 - 3/4 lb, skin on or off
  • 1/4 cup Sriracha sauce

Staples Used

  • 1/3 cup dark brown sugar
  • 2 Tbl soy sauce
  • 5-6 cloves garlic
  • 1 tsp red pepper flakes

Recipe

Mix the Sriracha, brown sugar, soy, garlic, and red pepper. Pour over the salmon, and marinate for 30-60 minutes.
Preheat oven to 375.
Heat a couple Tbl of canola oil in non-stick skillet over medium-high heat. When shimmering, put in the salmon filets, flesh side down; sear for two minutes, then flip to skin side down, to get it slightly crispy. (Be careful -- it can spatter a lot.)
Pour the leftover marinade over the salmon, and put into the oven for five minutes to finish cooking through.

Notes

Originally from a page in Costco Magazine, credited to "Multiexport Foods". This is our modified version, but in the spirit of the original -- half the fish, 2/3 the sauce, twice the garlic
Uses: Skillet, Oven
Goes With: We tend to serve this over broccoli in cooler months. Works nicely over raw snow or snap peas when it's hotter out.
