Jalapeno Baked Fish with Roasted Tomatoes and Potatoes

Shopping List

  • 2 red or white thin skinned potatoes
  • 1 can diced tomatoes, preferably fire roasted
  • Fresh cilantro
  • 1/4 cup pickled jalepenos
  • 2/3 - 3/4 lb Skinless white fish, preferably mahi, halibut, striped bass or black cod

Notes

Can up there garlic, but do not increase the jalepenos or brine.
Note that the shopping list is for half the fish and potatoes, but all the sauce. Use the rest of the sauce on the veggies.
Uses: Oven
Goes With: Steamed broccoli, with the sauce.
