Ingredients

1 1/2 cup Small White Pea Beans (cooked)
1-2 large cloves Garlic (minced)
1 medium Onion (parboiled if desired, and minced)
2 Tbl Olive Oil
Poudre Douce

Steps

  • Drain beans well. Put oil in skillet to heat up, then stir all ingredients together over med heat until onions are translucent. Place in serving bowl & sprinkle w/ powder douce.

Notes

The fried beans sounded ok, but the powder douce topping made me hesitate -- It turned out delicious!
Called for onion to be boiled first, then minced. This did take some of the sharpness of the onion away, but it was slippery (& potentially dangerous)to chop. I'd fry unboiled onions well next time.
You could put in less garlic & onion, but I'd just as soon be hung for a wolf as a sheep....
Cheap!
Suggested for a feast, but only serve small servings & go light on the spices - (pass extra on the side)
Can be enlarged.
Non-dairy vegetarian
Good for campfire cookery!
Easy to prepare!
