Spicy Sesame Noodles (Wiggly Noodles)

Shopping List

  • 1/4 cup creamy peanut butter
  • 1/4 cup Sesame tahini
  • 2 oz rice wine vinegar
  • 1 oz toasted (normal) Sesame oil
  • 2 tsp chili oil
  • 1 lb pasta - we prefer fusilli longi

Staples Used

  • 1/2 cup warm tap water
  • 3 oz soy sauce

Recipe

Set the pasta to cooking. While that cooks:
Put the peanut butter and tahini into a medium bowl. Whisk in the warm water until smooth. Whisk in the other ingredients, until smooth.
When pasta is done, pour sauce over and usually let cool. Can be refrigerated, but is usually fine on the counter for a few days, covered.
Can be served at room temp, or slightly heated.

Notes

Originally from the New Moosewood, I think.
Known as "Wiggly Noodles" due to the fusilli.
Note that the sauce will not be entirely smooth. That's okay - it will melt when you stir it into the hot pasta.
Keeps well at room temperature for a fair while, but not forever -- we've seen it go moldy in a closed container, in warm weather, after about four days.
