Quick S'mores Bars

Golden Grahams (8 oz or so)

10 oz bag mini marshmallows

1 1/4 semi-sweet chocolate chips

Set 1/4 cup or so of chocolate chips in the freezer for at least 1/2 hour.
Put a few handfuls of Golden Grahams into a ziploc bag, and pound them a bit -- not to dust, but break all the pieces down a bit.
Line a 9x9 baking pan with a sling of aluminum foil or parchment paper, and hit that with some cooking spray to grease them.
In a nonstick skillet, melt the butter over medium heat. (Yes, it's a lot of butter.) Add the marshmallows, and stir until they are melted and the whole thing is mostly smooth. Do not overcook the marshmallows, or they will begin to caramelize, which will affect the final texture.
Turn heat down to low. Gradually fold in the Golden Grahams, starting with the pounded ones. The amount is approximate; go until it looks good. The goal is to get to "grahams held together by marshmallow". (As opposed to "marshmallow with some grahams in it".)
Turn off the heat. Fold in 1 cup chocolate chips, and stir until everything is reasonably well mixed. These chips will largely melt.
Turn the whole mess into the greased baking pan, and press down with the back of a tablespoon until it is vaguely flat. It doesn't have to completely fill the pan, but square it a bit. Take the frozen chips from the freezer; strew them evenly on top, and press them in.
Put it all in the fridge for half an hour or so, until set.
Turn it out onto a cutting board, and slice into bars. It should all be solid and crunchy.
