  • 3 lbs boneless beef shank, long cut if possible; or 3-4 lb chuck roast
  • 2 large white onions
  • dry white wine
  • 8 oz Spanish chorizo

Notes

Majority of time is oven
Trust the recipe -- as written, it is quite good. Make sure to get good Spanish chorizo -- it is central to the flavor. Don't use boneless short rib: it dries out in this preparation.

-- Only 2/3 as good as the Catalan stew -- but less than 1/4 the effort. Very easy to prepare.
