Oven Roasted Salmon

  • 2/3 - 3/4 lb Salmon

Recipe

Put small baking sheet in the oven. Preheat to 500.
Dry the salmon. Rub all over with a bit of oil. Remove baking sheet, and reduce oven to 275. Place salmon on the baking sheet; hit with some salt and pepper, and return to oven.
Roast 9-12 minutes, checking with instant-read thermometer, until the thickest part of the salmon reaches about 125 degrees.

Notes

This is a bit simplified from the CI version. (Which tells you to slice the salmon skin -- that is way too much work.)
CI also has tomato and cucumber relish ideas, but this goes wonderfully on Cauliflower Rice -- flake the fish on top of the rice.
