Notes
The original recipe calls for whole plum tomatoes; the crushed tomatoes work, but the tomato flavor comes out a little excessive. The plum tomatoes take longer to cook down -- allow a full 30-40 minutes for the sauce to thicken.
It also calls for skinless, bone-in legs, but it's much easier to use boneless thighs. So far I've browned them whole, then after adding the tomatoes I extracted the thighs, cut them up, and added them back. It might work well enough to just cut them up to begin with.
The chile powder is the hard item to obtain -- paprika is officially a substitute, but the Kashmiri chilli powder provides a brighter and spicier flavor.
Ideally, use the Ginger People minced ginger for the beginning of the recipe, but have fresh ginger for the matchsticks at the end.
