Bahamian Grilled Chicken

Shopping List

  • 2 bone-in skin-on chicken breast halves
  • 1 cup lime juice
  • 1 small onion
  • 1 hot pepper: scotch bonnet, habanero

Staples Used

  • Garlic, minced
  • Thyme
  • Paprika

Notes

Used a full batch of marinade for half batch of chicken; worked well.
Try with grill lid closed: first try came in a bit rare, so I had to put one piece back on.
Maybe try with skin-on thighs, to make it less likely to overcook.
