Shopping List

  • 2.5 lbs boneless short ribs, thick (flunken)
  • 2 large onions
  • 2 plum tomatoes
  • 1/4 cup blanched almonds
  • 1 slice hearty white sandwich bread
  • Fresh parsley
  • 1/2 lb oyster mushrooms

Staples Used

  • Smoked paprika
  • Dry white wine
  • Cinnamon
  • Garlic
  • Sherry vinegar

Notes

Do not use the chopper on the onions! Take the time to chop them by hand - the chopper results don't caramelize well.
Probably works fine with bone-in ribs (much cheaper), but those should be browned, and braised covered for 4-5 hours at 350.
